Nutrition education does not stop once students leave the classrooms. Schools are using their cafeterias, gardens and community partnerships as learning laboratories to support increased fruit, vegetable and plant-based protein consumption. Implementing customized initiatives like Meatless Monday or Lean & Green programs can help schools in meeting the national nutrition standards, reduce plate waste, increase the volume of locally sourced ingredients and save on food costs.
